Paneer is a kind of Indian Cheese. It can be cooked in a number of ways. You can make curries, fritters, stir fry it or make koftas. In fact Indian food journey is incomplete without paneer.


It is a kind of staple in my household. I always have a few packets of store bought paneer in my household. Why not? It is nutritious, delicious and versatile.


Here in this post I am sharing recipe of Paneer Pulao. This is one of my go to recipes. It is made with Basmati rice, paneer and lots of love. I usually cook it in instant pot. It can also be cooked in pressure cooker or pot.

Ingredients

  • 🌱200 grams paneer, cut into cubes
  • 🌱1 cup basmati rice soaked for 1- 2 hrs
  • 🌱1 large onion chopped
  • 🌱 1 1/2 cup chopped bell peppers
  • 🌱1 tsp cumin seeds
  • 🌱1 bay leaf
  • 🌱 Whole garam masala *(1 star anise, 1 black cardamom, 1 inch cinnamon stick, 1 mace flower, 4 green cardamoms, 8 cloves, 8 peppercorns, 1/2 tbs Shahi jeera (optional)
  • 🌱 1/4 cup cashews
  • 🌱 1/4 cup raisins
  • 🌱1 tbs ghee
  • 🌱2 tbs sugar
  • 🌱 Salt to taste
  • 🌱 few strands of saffron soaked in milk (optional)
  • 🌱 lemon wedge
  • 🌱 1 1/2 cup water
Instructions

Heat Ghee on sauté mode.
Add cumin seeds, bay leaf and whole garam Masala.
Stir in onion and add Salt.
When they turn pink, add chopped bell peppers.
Saute for a minute and add paneer cubes, cashews and rasins.
Stir in rice and sauté for a couple of mins.
Stir in Saffron strands.
Add water, Sugar and lemon wedge.
Secure the lid and pressure cook for 3 mins.
Let the pressure release by itself.
Serve with raita and salad.

Tips
  • If you want you can use 1 tsp turmeric powder instead of Saffron for colour.
  • If you are cooking in stove top pressure cooker, use 2 cups water.
