This is such an easy yet satisfying meal! The perfect midweek meal for busy households like mine. It’s super quick to put together and so good. I like to pack my pasta with healthy fats like olives and extra virgin olive oil and veggies are always present too in a way or another. Either visible or hidden to please the sight and the taste of my fussy son too.

Quick Spaghetti Pesto Calabrese & Breadcrumbs

Ingredients

Ingredients for 4 people

  • 400gr spaghetti
  • extra virgin olive oil
  • 1 red pepper
  • handful of black olives
  • calabrese pesto in jar
  • breadcrumbs
  • Parmesan cheese
  • oregano
  • paprika
  • basil for decoration

Instructions


While you cook the pasta, cut the pepper in small cubes and pan fry them with some EVOO for about 5 minutes. Add the black olives and cook for another 5 minutes. Leave aside.
In another frying pan cook with some EVOO the breadcrumbs with spices like oregano and paprika until they turn brown and crunchy.
Once the pasta is ready pour it in the pan where the peppers and olives are. Add the pesto calabrese and mix well.
I’ve used a store bought pesto calabrese but you can also make your own with some tomatoes, peppers and ricotta.
At last add the breadcrumbs and sprinkle with Parmesan cheese.

Tips

  • When you add the breadcrumbs, drizzle more EVOO as the breadcrumbs will absorb some of the sauce.
