Roasted Tomatoe and Pesto Pasta
This pasta is pure comfort food. I had made a batch of pesto and whenever I do that I know I will want to make some pasta to go with it. I decided to roast some small Campari tomatoes to go with it. It was wonderful. First I had made up my homemade pesto, which the recipe is post on here. Then I took my tomatoes and began halving them and layed them on a parchment lined pan. I added some minced garlic and olive oil. I sprinkled the mixture with slat and pepper and put it int he oven on a high heat to roast. This only takes ten minutes. In the meantime I boiled some water for my pasta, you can use what ever type you want. I cooked the pasta to al dente. I added my tomatoes to a pan with a half of a cup of my pesto, you can use store bought also. Stir that until warm and then add in your pasta and stir to combine. You can add more parmesan if you want and a little cream if it seems dry. MY tomatoes were juicy enough It all came together good.

Ingredients
Roasted tomato and pesto pasta
- 2 c small tomatoes, grape or cherry sized
- 3/4 cup pesto
- 1 t minced garlic
- olive oil
- salt and pepper
- Pasta cooked and drained.
Instructions
Roasted tomato and pesto pasta
- Preheat oven to 400 degrees
- Cut your tomatoes in half if needed.
- Lay on a parchment lined pan with the garlic olive oil drizzled over and salt and pepper.
- Roast for ten minutes or until tomatoes are juicy.
- Add to saucepan
- Add in pesto stir until combined.
- Add in pasta and stir
- Serve warm.
