One Pot Creamy Gnocchi and Sausage

It's been a while since I have posted a dinner recipe... I may or may not have had a bit of a baking obsession the last few weeks. The good news is this gnocchi dish was worth the wait! It is so delicious and so easy, and we can't help but grab seconds whenever I make it. It only needs 10 ingredients and less than 30 minutes to make - it seriously doesn't get better than this. The creamy sauce is the perfect complement to the soft, pillowy gnocchi. My husband is still raving about it - calling it "restaurant worthy". If that doesn't make you want to get up and go cook this I don't know what will! We have added this to our regular rotation, along with Creamy White Chicken Chili and Easiest Chicken Pot Pie, both of which are also family favourites!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound mild Italian sausage (removed from casing)
  • 1 bell pepper, cut into thin strips
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1/2 cup half and half cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 500g pack of gnocchi
  • 3 cups spinach, lightly packed and roughly chopped
Instructions

In a large pan, heat oil over medium heat, then add sausage and cook, stirring frequently, until browned on all sides.
Add in the bell pepper strips, and cook another couple of minutes until pepper starts to soften
Add in the tomato paste, stir, then add the chicken broth, cream, garlic powder, Italian seasoning, and finally the gnocchi. Stir to combine.
Bring to a simmer, then cover with a lid and allow to cook for 5 minutes
Remove lid, add spinach, stir, then cook an additional 3-5 minutes or until sauce is thickened and spinach is wilted
Tips
  • Use a good quality Italian sausage that you enjoy - the dish is mainly flavored from the sausage so it is important that you like it!
  • After removing the lid, if the sauce is too thin, you can simmer gently until the sauce thickens, but it will also thicken as it cools so it helps to let it stand about 5 minutes before serving

    It looks delicious so nice and warm in your tummy perfect for a rainy day dinner. I may use 1 chicken breast & thinly cut it & brown it up after cooking the sausage. Maybe a little green onions for a little hint of fresh onion flavour.

    With some gliten free garlic bread to seal it with a crunchy kiss🍞!

    This was great; easy, fast, and tasty! It’s a keeper! I wasn’t sure if the gnocchi would cook fully, just being mixed in with the rest of the ingredients, because I’ve always boiled it. It worked well and letting it sit for 5 min. before serving did the trick.

Next
