Nutty Beetroot Pesto Pasta

This recipe is bomb! Immodestly speaking, I fell in love with this recipe as soon as I decided to combine the ingredients I've chosen. Umami is an understatement - the combination of beetroot, walnuts, garlic and feta cheese is an absolute discovery of mine this November!
The recipe is super easy to make and takes roughly 15 minutes to make - while you're cooking pasta, you can prepare the creamy beetroot mixture to add to it when it's done.
What I also love about this recipe is the colour that this combo gives you! Oh, and trust me when I say: these photos are NOT edited in any shape or form - I decided to share them the way they are to show you its true colours! This pick is unbelievable, isn't it?

Ingredients
- 300g cooked beetroot
- 1 garlic clove
- 1 handful of walnuts
- 120g feta cheese
- 2 handfuls of spinach
- 240g pasta
Instructions
- Cook pasta by following the instructions on the packaging.
- In the meantime, combine beetroot, garlic and walnuts together, and blend to obtain a creamy mixture (add 2-3tbsp of water if needed).
- Cut feta cheese into smaller cubes.
- Once pasta is cooked, combine it all together. Add spinach and enjoy.
Tips
- You can add more garlic cloves if you'd like more spiciness in this meal.

What is beetroot and where can I buy it?
I would love to try this recipe, but don't have a gram scale, so have no idea how much these ingredients are. I tried looking up gram to U.S. standard measurements conversion tables, and am even more confused (i.e., beetroot = butter?, feta = ??).
