Haitian Spaghetti with Hot Dogs was developed by Haitians in America as a cost efficient and quick and easy recipe to feed their families with little cost.

This is not a traditional Haitian recipe per se, but one that was developed here in America by Haitian immigrants. This recipe was an economical way to feed their families quickly and by not breaking the budget. With children to feed and two working parents, this recipe solved both concerns:

  • Quick recipe
  • Budget recipe

However with so many people going back and forth between Haiti and US cities like Miami and NYC, this recipe has become just as popular in Haiti as it is in America with some people.

Most people once they try Haitian food, end up loving it. As soon as I tell anyone I am ½ Haitian, the first thing anyone asks me is “Do you know how to make the Black Rice?”. I tell them absolutely and direct them to my recipe here on the blog.

The only thing is that unless you live in Miami or NYC, most people have little exposure to Haitian cuisine. This is the only reason Haitian Food is not as popular as other Caribbean Cuisines.

What is Haitian Spaghetti?

In its simplest form, Haitian Spaghetti is spaghetti cooked with hot dogs and tomato paste with a few seasonings.

When I was a child, we usually made this hot dogs with spaghetti. This recipe is also so easy to make, the kids can even do it on their own. As hot dogs are pre cooked, you never had to worry about them not cooking the meat fully.

Sometimes we would also make Haitian Macaroni by taking a box of Mac & Cheese and just adding hot dogs to it.

Whether you prefer Haitian Hot Dogs & Spaghetti or Haitian Macaroni with hot dogs, they are both one of the favorite dishes of any Haitian American kid.

Now as there are many varieties of smoked chicken sausage and smoked turkey sausage on the market, sausage which is a more natural and less processed food product has replaced the hot dogs for many.

So now Haitian Spaghetti with Sausage from my circle of Haitians has become more popular than the hot dogs as a healthier alternative.

Quick & Easy Haitian Spaghetti is a weeknight dinner that will be ready in a jiffy and such a kid friendly meal everybody will be happy with this delicious meal.

Haitian Spaghetti Breakfast

For us Haitian Americans, we actually often eat Haitian Spaghetti for breakfast – sometimes with smoked herring and hard boiled eggs. However, I was never a big fan of smoked herring, but if you like it, feel free to add it.

Recipe Notes

It is VERY IMPORTANT that you use fresh thyme. Dried thyme will not impart the same flavor.

DONT FORGET to save the water you cooked the pasta in!

Epis, Haiti’s version of sofrito is the key to making this spaghetti so flavorful with just a few simple ingredients! However, if you don’t have epis made, you can simply add some chopped bell pepper and garlic for added flavor.

Haitian Spaghetti is not spicy, however if you want to add some heat to it, you can add a little of one of Haiti’s two spicy condiments – Sos Ti Malice or Pikliz.

How to make Haitian Spaghetti

  • Boil spaghetti according to package instructions and RESERVE PASTA WATER.
  • Brown sausage.
  • Add onions and epis seasoning.
  • Add tomato paste dissolved in reserved pasta liquid.
  • Add cooked spaghetti and fresh thyme.
  • Toss with reserved pasta liquid as needed.
  • Garnish with extra thyme.

Haitian style spaghetti is not saucy, but it is not dry either. It should be tossed with just enough liquid to coat the spaghetti.

  • 1 lb. spaghetti
  • 1 lb. chicken sausage
  • 3 tablespoons olive oil
  • 1 sliced onion
  • 2 teaspoons fresh thyme
  • 1/4 cup epis or 1 teaspoon chicken bouillon
  • 2 tablespoons tomato paste

Cook spaghetti in well salted water, according to package instructions in well salted water until all dente.
Strain the spaghetti, reserving the cooking liquid.
Toss the spaghetti with 1 tablespoon of oil to prevent it from sticking together.
Meanwhile, heat the remaining oil in a pot.
Add sausage and saute until browned. Add more oil, if needed, to avoid sticking.
Add onion and saute until softened.
Dissolve tomato paste in 1 cup of the reserved pasta water. Whisk to combine.
Add to pot with thyme and bring to a boil.
Add cooked spaghetti and toss until well combined and coated with the sauce.
Add reserved pasta water, as needed, so that the pasta is not dry.
To serve, garnish with additional thyme.
  • Although I used smoked chicken sausage, you can also use hot dogs or any kind of smoked sausage you prefer.
