Homemade Gnocchi Recipe Like Mom Makes

To honor my mother, I'm going to share one of my family's favorite gnocchi recipes to make on Sundays. It's cheap to make and delicious. My kids also helped make these gems with me while creating this recipe. Let me show you how to make it.


Clean and peel potatoes. Cook potatoes in boiling water until fork tender. You can find a Ricer on Amazon (affiliate).


Remove the potatoes and run through a ricer. Let cool in a bowl.


Add 3 cups of all-purpose flour, a pinch of salt, and one egg (uncooked) to the priced potatoes. Mix well with a fork until just combined into a ball. 


Then, knead for 3 minutes on a floured surface until it looks like a smoother ball. Set under a tea towel for 15-20 minutes. It should look like the image above.


Place the dough on a tablecloth and sprinkle extra flour on both sides of the dough. This will help prevent the gnocchi from sticking to the cloth.

Get a fork and a knife.




Cut a piece of the dough and roll it into no more than ¾ inch diameter strips.

With the back of the fork, roll the piece of gnocchi on the back of the fork starting from the bottom, pressing down gently toward the top. Then let it fall onto the floured tablecloth.

Repeat these steps until all the gnocchi dough is finished. Let sit for an hour to dry.


When you are ready to cook, boil salted water. Add a plate full of gnocchi at a time, and when they float to the top in the water, they are done.


Add a large spoonful of sauce to a pasta bowl. Using a holed spoon, scoop them out and place them in your favorite sauce. I mixed it with a simple tomato sauce my mom made.

To freeze them before cooking: After you let them dry for 1 hour, Place them on a wax paper baking sheet and freeze until hard. Then, remove them and place them in a gallon bag. When ready to cook, place them frozen directly into the boiling water. When they rise to the top, they will be finished.

Using the knife, cut the strips into ¾ inch wide pieces.
With the back of the fork, roll the piece of gnocchi on the back of the fork starting from the bottom pressing down gently toward the top. Then let it fall onto the floured tablecloth.
Repeat steps 8 through 10 processes again until all the gnocchi dough is finished.
Let sit for an hour.
Boil salted water.
Add a plate full of gnocchi at a time and when they float to the top in the water, they are done. Add a ladle of sauce to a pasta bowl. Using a holed spoon, scoop them out and place in your favorite sauce.
Repeat step 14 until you cook all the gnocchi.
Toss the gnocchi in the sauce to coat and add parmesan cheese if you wish.
Enjoy immediately.
