Ever find yourself in a dinner rut with no idea what to cook. This incredibly easy recipe takes no time at all and makes a great side, or you could even dress it up and serve it as a main.

I really enjoy these peanut butter noodles as a simple yet hearty lunch. The creamy peanut sauce is subtle in flavour but adds a decadent richness to the plain noodles.

My family really enjoys this recipe (especially the kids) even my pickier eaters gobble this up. I enjoy topping my bowl with sesame seeds and green onions for a little added crunch and freshness.

This is definitely my go to recipe for when I need to get food out on the table fast and don't feel like cooking.



Boil pasta according to package directions.

While the pasta is cooking, mix together the sauce by combining 1/3 cup creamy peanut butter, 1/3 cup Thai Sweet Chili Sauce, 1/3 cup soy sauce and 3 tsp sesame oil in a medium sized bowl.

Set the sauce aside until the noodles are done cooking. At this time I like to prep my toppings.

You can add fresh chopped veggies, peanuts or green onions to this dish.

When the pasta is al dente drain and put the noodles back in the pot.

Pour the sauce over the noodles and toss until evenly coated.

And there you have a simple yet delicious meal that is sure to please the whole family.

Ingredients
For the Sauce
  • 1/3 cup creamy peanut butter
  • 1/3 cup Thai Sweet Chili Sauce

  • 3 tsp sesame oil

  • 400 grams pasta of your choice
  • Sesame seeds for garnish
  • 2-3 sprigs green onions

While the pasta is cooking, mix together the sauce by combining 1/3 cup creamy peanut butter, 1/3 cup Thai Sweet Chili Sauce, 1/3 cup soy sauce and 3 tsp sesame oil in a medium sized bowl.

Pour the sauce over the noodles and toss until evenly coated.
Serve and garnish with sesame seeds and green onions.
Tips
  • Since the sauce is on the thicker side, I recommend using a sturdier noodle such as spaghetti or linguine.
  • To add even more flavor try this dish topped with some chopped peanuts and a squeeze of fresh lime juice.
