This dish is a wonderfully simple date night recipe that I like to dust off from time to time. It's sure to impress any dinner guest as the flavours of garlic sun-dried tomatoes and oregano mixed with the creaminess of parmesan and heavy cream make this dish taste as good as what you would get at an Italian restaurant!


What's more is it is super easy to make and uses a number of store cupboard ingredients, making this a relatively inexpensive dish that can be thrown together easily on a week night.

This perfect date night pasta recipe is sure to impress any dinner guest!

Chicken is cooked in butter to give it a rich, succulent flavour, then tossed on garlic, sun-dried tomatoes, oregano and a touch of chilli for added warmth.

Heavy cream and parmesan cheese gives this dish it's creamy finish.

Spinach is stirred in at the end until wilted.

Ingredients

  • 8oz pasta, such as penne or farfalle
  • 7oz sun-dried tomatoes in oil, drained and cut into thin julienne strips
  • 1.5 lbs boneless and skinless chicken breasts, cut into bite sized pieces
  • 1 tbsp unsalted butter
  • 3 cloves garlic, peeled and crushed
  • 1/4 tsp dried red chilli flakes
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 cup dry white wine
  • 2/3 cup heavy cream
  • 2 cups fresh baby leaf spinach
  • 1 cup freshly grated parmesan
Instructions

Cool the pasta according to packet instructions until al dente and set aside.
Add the butter to a large saucepan and melt over a gentle heat, then add the chicken and fry until cooked on all sides.
Add the garlic, sun dried tomatoes, salt, pepper, chilli flakes and oregano and fry for 2 minutes until fragrant.
Add the wine to deglaze the pan and cook for 2 minutes or until the wine has evaporated.
Add the heavy cream and stir well, then add the cooked pasta, spinach and parmesan to the pan, remove from the heat and stir until the parmesan has melted and the spinach has wilted.
