Boursin Cheese Chicken Bacon Pasta

I have been seeing Boursin cheese all over social media lately and I have been told several times that I need to try it. Boursin is a creamy, spreadable cheese seasoned with garlic and fine herbs. I know a lot of people just eat it with crackers or put it on their baked potatoes but as soon as I saw that it was garlicky and herby, I knew I had to make pasta with it. And yes, it is definitely worth the hype. Nothing better than cheesy, garlicky, and creamy pasta. Plus it has bacon! What more could you ask for!?

Ingredients

  • 4 oz pasta
  • 1/4 cup bacon bits (about 4 slices of cooked bacon)
  • 1/4 cup chopped spinach
  • 1 Tbsp olive oil
  • 1 chicken breast
  • Garlic powder, Italian seasoning, paprika, salt & pepper to taste
  • 1/4 cup dry white wine
  • 2 cloves minced garlic 
  • Red pepper flakes to taste
  • 1/2 cup chicken broth 
  • 1/2 cup heavy cream
  • Boursin cheese (5.2 oz)
  • 1/4 cup parmesan cheese
Instructions

Heat 1 Tbsp of olive oil in a skillet over medium heat.
While that’s preheating, season chicken with garlic powder, Italian seasoning, paprika, salt & pepper.
Place chicken in skillet and cook until no longer pink.
Remove chicken and set aside.
Deglaze the pan with white wine then add in the minced garlic and red pepper flakes.
When the garlic is toasted, add in the chicken broth, heavy cream, Boursin cheese, and parmesan.
Stir until combined and let simmer while you cook the pasta.
While that’s cooking, chop or shred the chicken and add it back into the sauce, along with the bacon bits and chopped spinach.
When the pasta is done, strain it and then add it into the sauce as well.
Serve with extra parm!
