Sometimes I just love a good hearty meal, and something that is warm and just feels so home cooked and fresh. This pasta I am about to walk you through is exactly that for me. I really love it and it reminds me on my mom’s cooking from when I was growing up. She would make this after a long day at work and it would not take a super long time but would just taste incredible. I hope you enjoy this recipe as much as I do. I made it with ground beef but you can always swap it out for grouo turkey or chicken or perhaps tofu!

Ingredients

  • 500g of brown rice pasta
  • 2 table spoon olive oil
  • Handful of chopped kale
  • 1 green bell pepper diced
  • 500g of ground beef
  • 500mL of garlic and herb pasta sauce
Instructions

Bring a pot of hot water to a boil and add a pinch of salt
Once hot water has boiled add in pasta to cook and take it off the heat once cooked.
While pasta is cooking, in another pan add olive oil and ground beef on medium to high heat.
Once pasta is cooked, save two tablespoons of the pasta water and put the pasta to the side.
Mix around the ground beef as it browns and cooks
Once ground beef is half cooked add in your green peppers, pasta sauce and pasta water.
Stir the mixture until the beef is fully cooked.
On low heat add the pasta to the pan, mixing it in and also adding the kale
Serve with Parmesan sprinkled on top if you would like (optional)
