Mother Nature flipped the fall switch right on time here. The first day of fall for us was crisp and cool, the perfect autumn weather!

Immediately, I started craving warm and cozy food. It’s time to trade in my summer smoothies for warm and filling baked oatmeal with apples.

This recipe is easy to make gluten-free, dairy-free, and vegan.

Apple Spice Baked Oatmeal Ingredients


Here’s what you need to make this baked oatmeal recipe. The measurements are in the recipe card below.


  • Rolled old-fashioned oats: Use certified gluten-free if making this a GF recipe.
  • Cinnamon
  • Allspice
  • Nutmeg
  • Baking powder
  • Sea salt
  • Milk: Use your choice of dairy-free milk if making this a dairy-free recipe.
  • Unsweetened applesauce: If you need to use sweetened applesauce, adjust the maple syrup.
  • Maple syrup
  • Vanilla extract
  • Apple: Diced and peeled.
  • Pecans: Chopped.


Baked Oatmeal with Apples Directions


Step One:

Preheat your oven to 375 degrees F and grease an 8×8″ baking dish.

Step Two:

Add oats, cinnamon, allspice, nutmeg, baking powder, salt, milk, applesauce, maple syrup, vanilla extract, and 3/4 cup of the diced apples to a large mixing bowl.

Mix everything together until the ingredients are fully incorporated.

Step Three:

Place the mixture into your prepared baking dish.

Top with the remaining cup of diced apples and 1/2 cup of chopped pecans.

Bake in your preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Allow the baked oatmeal to cool for at least 10 minutes before slicing and serving.

How can I make this oatmeal recipe sweeter?


This is not an overly sweet recipe. If you’d like to make it sweeter, you can increase the maple syrup in the recipe to 1/3 cup. Another option is to drizzle more maple syrup on top of the oatmeal when you serve it warm.

If your baked oatmeal isn’t firm enough to slice right away, just give it time. It firms up as it sits.


Can I make this recipe the day before?


Yes. In fact, this breakfast recipe is excellent for meal prep. Assemble and bake a batch the day before, allow it to firm up overnight, and then slice it up for quick breakfast bars, additions to lunches, snacks, etc.

Ingredients

  • 2 cups rolled old-fashioned oats (certified gluten-free if necessary)
  • 1.5 teaspoons cinnamon
  • ⅛ teaspoon allspice
  • ⅛ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ sea salt
  • 2 cups dairy-free milk
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup apple, diced and peeled (divided)
  • ½ cup chopped pecans
Instructions

Set your oven to 375 degrees Fahrenheit and prepare an 8x8” baking dish with nonstick cooking spray or butter.
In a large mixing bowl, combine oats, cinnamon, allspice, nutmeg, baking powder, salt, milk, applesauce, maple syrup, and vanilla extract. Stir in three-fourths cup of diced apple.
Pour the mixture into the prepared baking dish and top with the remaining diced apple and chopped pecans.
Bake the oatmeal bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Allow the oatmeal bake to cool for 10 minutes before slicing and serving. Enjoy!
Tips
  • If you prefer your baked goods to be on the sweeter side, you can increase the maple syrup in this recipe to one-third cup, or drizzle a little extra on top when serving warm.
