Homemade Maple Granola

So I found another way to my son’s heart: Homemade granola.


He’s already asked for it several times, and meticulously eats them oat grain by oat grain. On top of THAT, my husband’s favorite granola is a pumpkin seed flax blend, so making something close to that takes care of him! I was looking for a way to use up some of the dried goods I have on hand, and wanted to make a healthier granola, naturally sweetened. @basicallygourmet provided the recipe, and it was 👌🏻(I did not add chocolate chunks). It's hard to go wrong with toasted oats, pumpkin seeds, and maple...throw in the flax and your nutritional value just skyrocketed! My excitement was rewarded by a granola as delicious as it was easy. And I’m sure it’ll be even better next time when I don’t over bake it 😅, but in the mean time there are no complaints over here from either of my men!

Ingredients

  • 1.5c old fashion oats 
  • 1 tsp vanilla 
  • 1/2 tsp salt
  • 2 tbsp EVOO 
  • 1/4c maple syrup + 1 tbsp for later 
  • 1.5 tbsp ground flax seed 
  • 1/2 c pumpkin seeds 
Instructions

Preheat oven to 350 and prepare a baking sheet with parchment paper.
Mix all ingredients together. Make sure the oats are  fully coated! Spread evenly on baking sheet on super thin layer (it’s ok if there is space between the oats!).
Bake 10 min, remove from oven, stir, then smash the oats back down into a uniform thin ‘sheet’ and drizzle with additional 1tbsp maple syrup.
Return to oven for 5-10 min or until lightly golden. Let cool completely (at least an hour) before breaking apart! If you’re adding chocolate add it now & enjoy! 🥰
Store in airtight container for up to 2 weeks!
