If you follow me on Instagram (and if you don’t, you should @theflouredcountertop), you know I’ve been posting about this Funfetti Granola recipe. It’s just the moment where everything aligns perfectly with the recipe, and the end result is an addicting sweet that I will definitely make again and again!

This Funfetti Granola is perfect for topping ice cream, yogurt, or just popping some in your mouth for a lightened-up treat. I’ve really been loving the birthday cake flavored Annie’s Bunny cookies lately, but I don’t think I’ll be buying them anymore, because this totally satisfies that!

Ingredients

  • 3 cups Old-Fashioned Oats
  • 3 Tbsp Canola or Vegetable Oil
  • 1/3 cup Honey
  • 1 tsp Salt
  • 3 Tbsp Funfetti Cake Mix
  • Additional Sprinkles (optional)
Instructions

Preheat your oven to 300°. In a medium bowl, pour in the 3 cups of Old-fashioned Oats, 3 Tbsp of Oil, 1/3 cup of Honey, and 1 tsp of Salt and combine.
Grease a sheet pan and pour the granola mixture in. Bake for 15 minutes, then take out and Sprinkle 1/3 cup of Funfetti Cake mix over the granola and mix it in, making sure it’s evenly distributed. Bake for another 15-20 minutes, until golden brown.
Immediately after taking out of the oven, sprinkle 1/3 cup white Chocolate chips over the hot granola and mix. This will allow the Chocolate chips to melt and coat the granola.
Spread out the granola on a piece of Wax paper to let it cool down. This where you can add additional sprinkles if you'd like. Once cooled, store in the refrigerator and/or enjoy over ice cream, yogurt, or just a fun snack. Should last at least 1 month. Enjoy!
