Baked Oatmeal With Blueberries Recipe
This recipe may look familiar.
It is the blueberry version of the Chocolate Chip Cinnamon Baked Oatmeal Recipe, and I can tell you it is just as delicious!
This recipe initially came from my Mom’s kitchen and has been made with chocolate chips, peaches and blueberries with rave reviews every time.
If you have clicked on the printable recipe you may have noticed the ground flax. I sneak ground flax into almost all of my baked goods. There are so many health benefits to flax including fiber (digestive health), Omega-3 Fatty Acids (cardiovascular health & skin/hair/nails) and lignans (phytonutrients).
As I am writing this I have 2 pans cooling on the stove to take to our family cabin this weekend for the Saturday breakfast I am responsible for.
To keep it dairy-free use non-dairy milk (vanilla almond milk works well) and to keep it gluten-free use gluten-free oats.
6 families which mean 15 kids under the age of 8! Wish us luck!

Baked Oatmeal With Blueberries
Recipe details
Ingredients
- 3 c unsweetened vanilla almond milk (or milk of choice)
- 4 eggs
- 1 c vegetable oil
- 1 c sugar
- 2 tsp baking powder
- 2 tsp salt
- 1/4 c ground flax
- 4 c GF rolled oats
- 4 c GF quick oats
- 1 c blueberries
Topping
- 1 c brown sugar
- 2 tsp cinnamon
- 1/4 c DF butter, softened
Instructions
- Mix the ingredients for the baked oatmeal, and place in a greased 9×13.
- Mix the ingredients for the topping, and sprinkle on the oatmeal.
- Bake at 350F for 45 minutes.
- Pair with breakfast sausages and fresh fruit.
