Grilling season is just around the corner. Can't wait for sunny weather, family time, grilling and chilling.


We love to grill! From meats, chicken to salmon and shrimp skewers. Here is a very easy recipe that you will be on repeat throughout the summer, specially after a day at the beach.


This easy recipe starts with 1 lb of large shrimp deveined and tail off. Then generously seasoned with my fave homemade seasoning mix to add a touch of smoked flavor to this dish. This comes form smoked paprika, one of my favorite spices to add to all meats! The key is to marinate at least 15-30 minutes before grilling so that all flavors are combined. I gently drizzle a little bit of avocado oil to avoid the shrimp sticking to the grill. the amazing topping to elevate the flavors of this grilled shrimp is my special Chimichurri sauce. Just delish on every bite. The combination of smokey shrimp and the tangy Chimichurri sauce is just perfect. I served with a side of Greek Salad ( my favorite salad).

Ingredients
SMOKEY SHRIMP SKEWERS
  • 1 lb of large raw shrimp (Clean, deveined and tail off) ABOUT 20-25 COUNT
  • 1 tsp of smoked paprika
  • 1/4 tsp of salt
  • 1/4 tsp of pepper
  • 2 garlic cloves (minced
  • 1 tsp of fresh chopped dill
CHIMICHURRI
  • 4 Garlic cloves
  • 1/2 bunch of flat leave parsley or curly parsley ( you need 1/2 a cup of finely chopped parsley)
  • 3/4 tsp of dry oregano
  • 1/4 tsp of crush pepper
  • 2 Tbsp of red wine vinegar
  • 1/4 cup of Avocado oil
  • 1/2 cup of Extra Virgin Olive oil
  • Salt + Pepper to taste
Instructions

In a large bowl mix the smoked paprika, garlic, dill, salt and pepper, then pas dry the shrimp and add to bowl. Mix gently to cat the shrimp with seasonings. Let it sit for 15 minutes. When ready, drizzle some avocado oil to avoid the shrimp to stick to the grill. Then assemble the skewers. You may add lemon wedges to the skewers to enhance these skewers. Cook for about 5 minutes each side, remove from grill and drizzle desired amount of chimichuri.
CHIMICHURI SAUCE
First chop the parsley finely to make about 1/2 a cup. Then finely mince the garlic. In a large bowl add the minced garlic, parsley, then add the remaining ingredients, mix all together and let it sit for at least 15 minutes, so that all the flavors are combined.

  • Shrimp? Chimichuri? What's not to love! I put chimichuri on everything. I grill year round and my brother will grill, smoke and old fashioned BBQ in the snow. Nothing stop him! I have put chimichuri on salmon, trout, tuna and all are excellent. Thanks for sharing your recipe! Pinned! ❤️
