Pesto Salmon Skewers

Like many of you, we have been grilling up a storm this summer. One of our new favs, these Pesto Salmon Skewers. In the summer, both Phillip and I crave fish and also no dishes. It is just too hot to wash dishes in my opinion. Our kitchen is a 10×10 room that no AC gets into, so the thought of turning on the stove or oven is frightening. However, this has taught us that most things that can be cooked on a stove or in the oven can also be done on the grill. Bigger bonus, NO DISHES. Grill these bad boys up and then lounge away.

Pesto Salmon Skewers
Recipe details
Ingredients
Mint and Parsley Pesto
- 1 cup parsley
- 1 cup pecans
- ½ cup mint
- 3 garlic cloves
- ¾ cup olive oil
- 1 lemon squeezed
Skewers
- 1 lb salmon cubed
- 1 lb baby potatoes
- 2 lemons sliced
- 1 zucchini sliced
Instructions
- Add all pesto ingredients into a blender and blend until smooth
- Assemble your skewers with salmon, potatoes, lemons, and zucchini
- Coat the skewers in the pesto and let rest for 20 minutes
- Grill for a few minutes on each side or until salmon reaches an internal temperature of 145°
- Serve with extra pesto sauce on the side
Tips
- Don't have a grill? No problem. You can add to a baking sheet and bake at 450 degrees until salmon reaches an internal temperature of 145 degrees.
