Air-fryer Crispy Salmon & mango salsa

Elevate your salmon fillets with a crispy crunchy topping and mango salsa. Summer is calling icon

I dont know about you but Summer is my favorite Season of the year. Not only I enjoy the nice weather to go to the beach, park or stay by the pool, but also the great fresh ingredients to make healthy and flavorful recipes.

I wanted to make something different from my usual fry fish or honey miso salmon, so came up with easy and tasty recipe, I hope you try it.

The key ingredients for the crispy crunchy topping are:

- 1/3 cup @sietefoods tortilla chips

- 1/4 cup pumpkin seeds

- 1 garlic

- 1 tsp of @sietefoods taco seasoning

All the ingredients into a food processor until all is combined

Simply pad dry the salmon. Season with salt, pepper & @garciadelacruzoliveyou lemon infused olive oil. Add the crispy topping and air fry at 375 for about 6-8 minutes. Topped off with mango salsa. Enjoy!

Crispy topping
  • 1/3 cup @sietefoods  tortilla chips or any other corn chips
  • - 1/4 cup pumpkin seeds 
  • - 1 garlic clove
  • - 1 tsp of @sietefoods taco seasoning or other taco seasoning of choice
Salmon & mango salsa
  • 2 pieces of Salmon (about 4-6 oz)
  • Extra virgin olive oil
  • 1 small mango
  • 1/4 red onion
  • 1/2 tomato or few grape tomatoes
  • 1/2 avocado
  • cilantro
  • salt and pepper to taste
  • 1 Tbsp of lemon infused oil or extra virgin olive oil

First make the topping, into a food processor add all the ingredients listed until all is combined.
Simply pad dry the salon. Season with salt, pepper & @garciadelacruzoliveyou lemon infused olive oil (or just olive oil). Add the crispy topping and air fry at 375 for about 6-8 minutes.
While the salmon cooks, prep the ingredients for the mango salsa. Finley diced, tomatoes, red onion, mango, and avocado. Then add chopped cilantro. Season with salt, pepper, lime juice and olive oil,
Once the salmon is ready, simply plate and top it off with mango salsa.  Enjoy!
