This is such a great one pot meal full of flavour & healthy protein! Also I totally love the colours & the summery vibes which it brings to the table! What not to love, right?

  • 5 Eggs
  • 4 potatoes
  • 1 can organic chickpeas
  • 1 can organic chopped tomatoes
  • 1 onion
  • Handful of spinach
  • 1 carrot
  • 2 slices halloumi
  • Extra virgin olive oil
  • Paprika
  • Dry & fresh parsley
  • Oregano
Instructions
Method
Start by roasting the potato wedges (I’ve used the air fryer for this, 15 minutes at 180 degrees Celsius).

Then drain canned chickpeas and roast them in the air fryer. 10 minutes at 180 degrees Celsius. I seasoned both with extra virgin olive oil, paprika, oregano, dry parsley.

In the meantime make the tomato sauce. Pan fry 1 onion and 1/2 pepper both chopped and then add chopped tomatoes and cook until the sauce thickens.

Now transfer everything on a round glass oven tray layering the roasted potatoes first, then the tomato sauce.

Crack in 5 eggs and transfer in the oven for about 20 minutes or until the egg white sets.

Add some spinach leaves. Once out of the oven sprinkle the roasted chickpeas on top, some grated carrot & halloumi, some fresh parsley too!

Everyone loved it! We ate it with some toasted bread slices. Soo good!😋

    What is halloumi? Replacement?

      It’s a semi hard cheese, you can replace with feta or mozzarella or grated cheese or leave it out all together. That’s an optional topping xx

    pepper was not mentioned in ingredient list. Bell pepper? And does spinach go in oven too or do we add after all is out of the oven?
