This easy and delicious egg casserole with eggs, cheese and mild green chiles is a crowd pleaser each and every time. Fabulous served either hot or cold.

This light, flavorful egg casserole is a winner for every breakfast, brunch or holiday entertaining.

Eggs, cheese, cottage cheese and mild green chiles are some of the ingredients in this recipe.

Mix all the ingredients together.

Pour the egg mixture into an ovenproof casserole dish and bake.

When the casserole is golden brown and set, it is ready to serve.

Depending on the size of the piece, this casserole serves between 12 and 15.

Ingredients

  • 10-12 eggs
  • 1/2 cup flour
  • 1 T. Baking Powder
  • 1 pint or 2 cups of cottage cheese
  • 1 large can (or 2 small cans) of mild diced green chiles
  • 1/2 cup melted butter
  • 1 lb. shredded Monterey Jack cheese
  • Salt, garlic powder and pepper to taste
Instructions

Preheat oven to 400 degrees F. Mix all ingredients together in a bowl until well blended.
Pour egg mixture into a buttered 9 x 14 inch pan.
Bake for 15 minutes on 400 degrees and then 30 minutes on 375 degrees. Great for any meal and can be served hot, cold or room temperature.
