Cheesy Vegetable Egg Bake

We really like eggs in our house as breakfast, brunch, and even the occasional dinner! Eggs are a healthy, quick, filling meal choice, especially when served with a fresh fruit salad, which is our favorite side to pair with eggs. I used to make an actual quiche for dinner sometimes as a treat, but I found we weren't really enjoying the pie-dough-with-egg combination, so I decided to just skip the dough one time and see what happened. As it turns out, it is so much easier and healthier without it that I started making it sans dough all the time and haven't looked back since!
This egg dish is sort of like a cross between an omelet and a frittata. I bake it in a 9x13 pan, so that it really spreads out and cooks quicker than if it was baked in a traditional pie dish. It's super easy to throw together, and you can customize the veggies to suit your tastes. We really like the spinach, broccoli, pepper, and cheese combination, but we have also made it with other veggies, meats, and cheeses depending on what's available in the fridge!
One of the reasons I like this meal so much is that it can be prepared ahead of time, then popped into the oven to bake when you're ready. Leftovers also heat up really nicely in the microwave. Normally I will make it for dinner, then serve as breakfast, or sometimes lunch the next day and it's just as delicious. I also recommend making up a batch or two and keeping it for quick and healthy weekday breakfasts!

Ingredients
- 8 large eggs, slightly beaten
- 2/3 cup cream
- 1 cup diced broccoli
- 1 cup baby spinach
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 F, grease a 9x13 pan
- In a large bowl, beat the eggs and creamy together until fully combined
- Stir in broccoli, pepper, spinach, and cheese
- Pour egg mixture into prepared pan, cover with tin foil and bake in preheated oven for 25 minutes
- Remove foil, bake an additional 10 minutes, or until center is fully set
