This garlic cream spread is so incredibly easy to prepare but so yummy! All you need to do is slice the tips off the heads of a couple garlic heads, drizzle with olive oil and wrap tightly with aluminium foil, then roast for an hour. (you can easily double this recipe and keep it on hand, just store in the refrigerator in an airtight container). I like to make this spread when im already baking something, like a yummy roast chicken, and make use of the oven! You can pair this with some fresh focaccia bread for dipping, or serve with any type of chicken for the perfect extra burst of flavour.

- 2 heads garlic
- ½ tablespoon olive oil
- fresh thyme leaves or dried thyme
- preheat oven to 175º
- Cut the tops off the garlic heads and place on a square of aluminium foil. Drizzle with the olive oil and close tightly.
- Roast for 1 hour.
- To serve: Squeeze the roast garlic out of the skins and mash well. Spoon onto the centre of a serving plate and use the back of a spoon to spread it out.
