Incredibly tasty pesto you can make with foraged wild garlic


It’s wild garlic time! One of my neighbours kindly gave me a huuuuge amount of foraged wild garlic and I’ve been using it in lots of different ways. One of them was this insanely tasty and creamy pesto I am sharing with you today!


I’m not going to lie though, it’s strong! Make sure your other half eats it too otherwise expect them not to come near you for a day or two. My husband complained for days about my garlicky breath....


If you find wild garlic too strong, you can also substitute part of it with basil, which makes it less accentuated.

Ingredients

  • 5.25oz Wild garlic
  • 1/2 cup grated Parmesan (or nutritional yeast for a vegan version)
  • 1/40 cup toasted Cashew nuts
  • 2/5 cup Olive oil
  • 1 Lemon, juice and zest
  • seasoning, salt and pepper
Instructions

Blend all the ingredients together in a high speed blender.
You can simply eat it like that spread on some bread (delicious!!) or as a pasta sauce with the addition of a little bit of the pasta water to loosen it up if preferred.
Tips
  • You can also freeze it in an ice cubes tray and just defrost the quanto you need!
