Who is ready for Super Bowl Sunday?


This girl right here is getting ready to host a fun and delicious Super bowl party bringing easy dishes with bold flavors. For starters, this spicy corn dip recipe is delish and totally a conversation starter. The blend of the crunchy roasted corn, creamy sauce, spices and the kick from the jalapenos, on a crispy chip is all you need to start watching the game. The idea of this recipe came for my love for roasted street corn, loaded with mayonnaise, tangy layer form the lime, spicy sauce and cheese.


So I decided to take the street corn into a casserole for the best dip ever for game day! Now, is time to dip- use corn chips scoops, tortilla chips, small endive wedges or mini bell peppers halves for a low carb option.

So let's start cooking!

A creamy corn dip, with all the bold flavors of the typical street corn but in a bowl to dip it with chips. Just delish!

Add your favorite toppings like fresh cilantro, more jalapenos and green onions.

First mix the frozen roasted corn, with mayonnaise and sour cream along with lime zest, lime juice and chili lime seasonings. For an extra kick add some fresh or pickled jalapneos.

Then a topped off with a generous layer of one of the best toppings: sharp cheddar cheese - my fave.

Garnish with more jalapenos and siracha sauce.

Baked to perfection and ready to add the toppings: fresh cilantro, green onions and more jalapenos if you like.

Ingredients

  • 1 bag of frozen roasted corn 
  • 1/4 of sour cream
  • 1/4 cup of Mayonnaise ( chosen foods) 
  • 3 tsp of chili lime seasonings 
  • Zest of 1 lime 
  • 1 Tbsp of lime juice 
  • 1 Tbsp of siracha (opcional) 
  • 1/2 of shredded cheddar cheese  
  • 1 green onion thinly sliced 
  • Pickled Jalapeños and fresh cilantro for garnish 
Instructions

In a large bowl mix these ingredients:
roasted corn
mayonnaise
sour cream
lime zest, lime juice
seasonings
Combine all together so that sour cream and bled of spices marry together. In a baking dish drizzle olive oil, and transfer the corn mixture and spread evenly. Top with some green onions, then cheese ( add more if you like it cheesier) a drizzle of Siracha and pickled jalapeños. Cover with foil. Bake at 400 degrees for 10-15 minutes, remove foil and broil oh high for 5 minutes. 
Serve with corn chips, tortilla chips, or use as stuffing for mini bell peppers or a version of jalapeno poppers.
