Creamy Cucumber Dip
In the Summer months I always like to have a good dip in the refrigerator as a smack. Lets face it when it is hot out it is hard to eat too much heavy stuff. This dip is easy to make and after resting in the refrigerator it is such a cool creamy addition for a snack or appetizer. I take at least one small cucumber from my garden and peel and chop it very fine. I usually remove the seeds to. No one want to find seed in their dip. I add that to a small mixing bowl and to that I add in the seasonings and then the sour cream and the mayo. I mix it all together well and the set it in the refrigerator at least four hours. If you refrigerate it overnight that is best. I serve it with veggies from the garden or in the Winter months I sometimes serve it with crackers. It really is an easy dip to make, sometimes I do use it when I am making a wrap for lunch it adds that something extra.
It is so refreshing.
