3-Variety Veggie Mousse Dips (Carrot/Beet/Avocado)

8 servings

I don't know if anyone else loves dips as much as I do, but I'm usually using veggies or bread as the vessel for the dips

I wanted to use some avocados I had that were about to turn and make them into a dip. I decided to whip the avocados with some olive oil and turn them into a lightened mousse-like texture.

Of course I couldn't stop there. I also whipped steamed carrots and beets into their own tasty dips as well. The toppings were fun to add to these as well. The dill and sharp radishes complemented the sweet carrots, while goat cheese and toasted pistachios were tasty on the beet dip. Naturally, I went with red onion and cilantro for the avocado dip.

Serve these with grainy crackers or nutty bread for the best tasting experience!
