Spicy Chickpea Tostadas

Sometimes the best recipe ideas come to me when I'm limited on ingredients in the house. This was one of those times I forgot to take meat out to thaw and my fridge was running practically empty. Using a can of chickpeas, some seasonings, cheese, sour cream and tortillas, I was able to make these delicious vegetarian chickpea tostadas.


Chickpeas are a great alternative to vegetable or tofu tacos/tostadas and are packed with protein. While I am not a vegetarian, I thoroughly enjoyed these as a change! Feel free to adjust the spice level to you preference.

Ingredients

  • 4 corn tortillas
  • 3 tbsp olive oil, divided
  • 1 can chickpeas
  • 1 cup shredded cheese
  • 1 packet taco seasoning
  • 1/4 cup sour cream
  • cilantro to garnish
  • onion to garnish
  • hot sauce (optional)
Instructions

Drain and rinse the can of chickpeas
Heat olive oil in a pan, then add the chickpeas & taco seasoning with 1 - 2 tbsp water until the liquid thickens and chickpeas are heated through
Add the sour cream into the seasoned chickpeas and mix together then set aside
In a separate pan, heat olive oil then add the tortillas
Add cheese to the tortillas and let it melt while the tortillas crisp up
Once crisp, move to a plate and top with your chickpeas
Garnish with cilantro, onion, and add hot sauce if preferred
