Balanced vegan meal with everything in one pan!


It doesn’t get any quicker or easier than this. In fact it’s so quick and easy that I managed to make this with my 2-years-old “helping” (aka making a mess and then having a meltdown because I didn’t let him cook at the hob) and holding a teething baby the whole time


It’s also very tasty and super balanced, with vegetables, carbs, protein and a little bit of good fats, which are so important for growing children 😊


Mushrooms are also a great first food to get your toddler practicing his/her knife skills! Once you have cleaned the mushrooms you can demonstrate how to cut them with a child-safe knife and get them to give it a try!

Ingredients

  • 2 1/2 cups mushrooms, sliced
  • 2 red onions
  • 4 1/4 cups fresh spinach leaves
  • 1 cup couscous
  • 1 cup vegetable stock
Instructions

Pan-fry the mushrooms and red onion together in a splash of olive oil over a medium heat.
After 10 minutes, once the mushrooms are dark in colour, add the spinach, a splash more oil and seasoning. Wilt in the pan for a minute, mixing constantly.
Remove from the heat, and while the pan is still hot, throw in the couscous and stock. Give it a stir and set the pan aside for a few minutes.
Serve and enjoy!
