Green Bean Casserole Stuffed Mushrooms

For the cheesy keto green beans, after frying the mushrooms and onions, mix everything in the pan and then transfer to a baking dish.

Adding the pork rind crumbs, gives the keto green beans another level of flavor and a crunchy topping.

The chicken and rice green bean casserole is a great way to use leftover chicken or turkey.

After frying the onions for the chicken and rice green bean casserole, place all of the additional ingredients right into the pan and mix well before placing it into a baking dish.

For the stuffed mushroom caps, simply snap the stems off the mushrooms and then clean the caps with a damp paper towel.

Fill the caps with the leftover green bean casserole and bake

Ingredients
Keto Green Bean Casserole
  • 1 cup sour cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon minced fresh garlic
  • 1 teaspoon salt 
  • ¼ teaspoon black pepper
  • 3 cups fresh green beans 
  • 4 tablespoons unsalted butter
  • 1 cup medium onion
  • 2 cups sliced fresh mushrooms 
  • 1 cup shredded Cheddar
  • 1cup pork rinds
Green Bean Chicken and Rice
  • 2 tablespoons olive oil
  • 1 medium yellow onion , chopped
  • 3 cups cooked rice 
  • 3 cups cooked shredded chicken or turkey
  • 1/2 cup slivered almonds
  • 2 cups fresh green beans
  • 1- 4 oz. jar diced pimentos
  • 1- 10.75 oz. can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • salt and pepper to taste
Green Bean Casserole Stuffed Mushrooms
  • 1 cup leftover green bean casserole
  • 1/4 cup French fried onions
  • 1/2 cup shredded cheddar cheese
  • 8-12 large white mushrooms
Instructions
Keto Green Bean Casserole
Preheat the oven to 400 degrees
Place pork rinds into a food processor and pulse until you have crumbs; set aside
Dice onion
Melt the butter in a large deep skillet over medium heat.
Add the onions and the mushrooms.
Mix the sour cream with the Dijon, garlic, salt, and pepper
Steam green beans
Mix in the steamed green beans, the sour cream sauce, and half the cheese.
Transfer the mixture to a baking dish. Top with the remaining cheese and with the pork rind crumbs
Bake until the casserole is heated through and the cheese is melted, about 20 minutes.
Green Bean Chicken and Rice
Preheat oven to 325 degrees
Chop medium onion
Heat the olive oil in a medium skillet over medium heat.
Add the onions and cook until just soft
Mix the rest of the ingredients with the onions until combined.
Pour mixture into a baking dish.
Bake for 25 minutes.
Green Bean Casserole Stuffed Mushrooms
Preheat oven to 400 degrees
Remove stems from mushrooms
Clean caps with a damp paper towel
Combine green bean casserole, onions, and cheddar cheese in a medium bowl.
Spoon mixture into mushroom caps.
Place stuffed mushrooms onto a parchment lined baking sheet
If desired sprinkle a few more onions on top.
Bake for 20 to 22 minutes.
