After frying the onions for the chicken and rice green bean casserole, place all of the additional ingredients right into the pan and mix well before placing it into a baking dish.
For the stuffed mushroom caps, simply snap the stems off the mushrooms and then clean the caps with a damp paper towel.

Keto Green Bean Casserole
- 1 cup sour cream
- 1 teaspoon Dijon mustard
- 1 teaspoon minced fresh garlic
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 3 cups fresh green beans
- 4 tablespoons unsalted butter
- 1 cup medium onion
- 2 cups sliced fresh mushrooms
- 1 cup shredded Cheddar
- 1cup pork rinds
Green Bean Chicken and Rice
- 2 tablespoons olive oil
- 1 medium yellow onion , chopped
- 3 cups cooked rice
- 3 cups cooked shredded chicken or turkey
- 1/2 cup slivered almonds
- 2 cups fresh green beans
- 1- 4 oz. jar diced pimentos
- 1- 10.75 oz. can cream of mushroom soup
- 1/2 cup mayonnaise
- 1 cup shredded sharp cheddar cheese
- salt and pepper to taste
Green Bean Casserole Stuffed Mushrooms
- 1 cup leftover green bean casserole
- 1/4 cup French fried onions
- 1/2 cup shredded cheddar cheese
- 8-12 large white mushrooms
Instructions
Keto Green Bean Casserole
- Preheat the oven to 400 degrees
- Place pork rinds into a food processor and pulse until you have crumbs; set aside
- Dice onion
- Melt the butter in a large deep skillet over medium heat.
- Add the onions and the mushrooms.
- Mix the sour cream with the Dijon, garlic, salt, and pepper
- Steam green beans
- Mix in the steamed green beans, the sour cream sauce, and half the cheese.
- Transfer the mixture to a baking dish. Top with the remaining cheese and with the pork rind crumbs
- Bake until the casserole is heated through and the cheese is melted, about 20 minutes.
Green Bean Chicken and Rice
- Preheat oven to 325 degrees
- Chop medium onion
- Heat the olive oil in a medium skillet over medium heat.
- Add the onions and cook until just soft
- Mix the rest of the ingredients with the onions until combined.
- Pour mixture into a baking dish.
- Bake for 25 minutes.
Green Bean Casserole Stuffed Mushrooms
- Preheat oven to 400 degrees
- Remove stems from mushrooms
- Clean caps with a damp paper towel
- Combine green bean casserole, onions, and cheddar cheese in a medium bowl.
- Spoon mixture into mushroom caps.
- Place stuffed mushrooms onto a parchment lined baking sheet
- If desired sprinkle a few more onions on top.
- Bake for 20 to 22 minutes.
