This recipe for Monster Protein Breakfast Cookies is unbelievably quick and easy- you only need one bowl and can have these ready to eat in 15 minutes! They are gluten-free, naturally sweetened, high in protein and filling! These are the perfect grab and go breakfast or anytime snack. This recipe is also customizable so you can change up the mix-ins or even use mashed ripe banana if you don’t have applesauce on hand. Recipe details
Ingredients
- 1/4 tsp coconut oil
- 1 1/2 cups old fashioned rolled oats
- 3/4 cup almond meal
- 1/2 cup vanilla protein powder
- 2 Tablespoons chia seeds
- 2 tsp ground cinnamon
- 1/4 teaspoon sea salt
- 3/4 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 2 tbsp honey or maple syrup
- 2 teaspoons vanilla extract
- 1/4 cup raisins
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 350°. Line a sheet pan with parchment paper and lightly grease it with ¼ tsp coconut oil.
- In a large bowl, stir together oats, almond meal, protein powder, chia seeds, cinnamon and salt.
- In a medium bowl, whisk together the almond milk, applesauce, honey, and vanilla.
- Pour the wet ingredients into dry ingredients and stir until combined. Gently stir in raisins and chocolate chips.
- Using a portion scoop, scoop the batter onto the prepared sheet pan, The batter will be wet, but still formable. Lightly press down the tops of each cookie.
- Bake in preheated oven for 10-12 minutes until firm.
- Remove from oven and let cool for 5-10 minutes.
- If there are any leftover, store in an airtight storage container for up to a week in the fridge.
