This are so delicious and so easy to make! They can be made vegan by using flax eggs and coconut oil instead of ghee.

They taste amazing right out of the waffle iron, but they taste great too when made ahead of time!

I love to make a big batch of this recipe and store some on my freezer for later use. We like to pop them in the toaster and top them with almond or peanut butter and any delicious jam.

To switch things up, we like adding blueberries, bananas or chocolate chips to the batter before making the waffles, that way we get different waffle flavors.

Ingredients
For the batter
  • 2 eggs
  • 3 very ripe bananas
  • 2 tsp baking powder
  • 1 heaping tbsp ghee (use coconut oil for vegan)
  • 1 cup of almond milk
  • Pinch of sea salt
  • 1/4 cup rolled gluten free oats
  • 1 cup white rice flour
  • 1/2 cup almond butter (better to use the bottom of the jar that is drier)
Instructions

Whisk the eggs and smash the bananas and mix together..
Add the baking powder and let it foam and mix well.
Add ghee and milk and keep whisking.
Add flour and oats and mix.
Once the batter is ready, just fold the almond butter crumbles.
Spray the waffle iron with coconut oil and make the waffles, make sure it is very hot.
