For all you cookie dough lovers out there, my S'mores Cookie Dough Bites are everything you need in life, and more. I don't know about you, but growing up, and still to this day, I look forward to make cookies just to lick the bowl clean. We've always been told raw cookie dough isn't great to eat because of the raw egg, which is 100% true, so I've created these egg-free raw cookie dough bites that will do just the trick!

You will notice how simple the ingredients for this recipe is, you will be surprised how easy and similar these taste to real cookie dough. I especially love this version because of the extra mix-in's I add in: marshmallows and graham crackers. The subtle sweetness and crunch from the graham cracker and chewiness from the partially frozen marshmallows hits the spot every single time. Make these for a night with friends or meal prep them on the weekend to have a healthy homemade dessert on hand for the week, whatever you choose, you won't regret it!

Ingredients

  • 2/3 cup cashew butter
  • 4 tbsp melted coconut oil
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1 tbsp unsweetened vanilla almond milk
  • 1 cup almond flour
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup mini marshmellows
  • 4 graham crackers (chopped)
  • 1 cup dark chocolate chips
Instructions

In a medium sized mixing bowl, add cashew butter, maple syrup, melted coconut oil, vanilla and almond milk. Whisk until smooth.
Add the almond flour, cinnamon and salt into wet ingredients. With a spatula, fold the dry ingredients into the wet ingredients until smooth.
Roughly chop (4) graham crackers.
Add mini marshmallows, chopped graham crackers and 1/2 cup dark chocolate chips. Fold in with a spatula until the dough is fully combined.
Line a baking sheet with parchment paper.
With a cookie scoop, scoop the dough into medium sized balls.
Place in the freezer for 15 minutes.
While the dough is setting in the freezer, melt 1/2 cup dark chocolate in microwave with 1 tsp coconut oil until velvety smooth.
After 15 minutes, remove dough from freeze. With a spoon, scoop and drizzle on top of the cookie dough bites.
Once you have drizzled each cookie dough bite with chocolate, place back into the freezer for at least 20 minutes to set.
Store in the freezer in an airtight Tupperware and serve straight from the freezer!
