I’ve always liked tapioca pudding, so I loved the way the chia seeds turned into similar “pearls.”


If you don’t like that tapioca consistency, just pop it in the blender to make it smooth.

Chia pudding is such a healthy treat!


It’s perfect for any gluten free or dairy free lifestyle.


I use a low carb sweetener for this recipe, so it has less than 1 net carb per serving.


So many keto desserts can be pretty high in fat, but this one has less than 10 grams of fat, which is really important to me because my body doesn’t process fat as well as it used to.


How to Make Chia Pudding Thick

Most of the chia pudding recipes I’ve made are too runny.


Even when I let the seeds sit in the liquid overnight, they are often kind of drippy on my spoon.


I’ve found that I prefer my chia pudding with a higher amount of chia seeds than most recipes use.


I’ve found that a 3:1 ratio of liquid to chia seeds is just about perfect.


That ratio creates a traditional pudding texture and it doesn’t require any other thickening ingredients.


Flavor Ideas for Chia Pudding

While I was experimenting with texture, I gave some new flavors a try too.


One of my favorite treats before going sugar-free in 2016 was Nutella.

I really love that chocolate-hazelnut flavor!


A quick search lead me to discover hazelnut extract, the perfect way to get that Nutella flavor.


Minus the sugar.


This recipe is so easy to make!


It’s perfect for those days when I can’t get enough chocolate into my body.


Sometimes I think a chocolate IV-drip would be the way to go…

This pudding is so good that you can serve it as a dessert, but it’s so healthy that you can have some with any low carb meal.

Ingredients

  • 1-1/2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 1/4 cup unsweetened cocoa powder
  • 3 Tbsp Pyure sweetener (or equivalent)
  • 1 tsp vanilla extract
  • 1 tsp hazelnut extract
  • pinch of mineral salt
Instructions

Whisk together all ingredients in a bowl until combined. Cover and refrigerate 4-6 hours, until thickened. For best results, stir every few hours to help prevent the chia seeds from clumping.
If desired, blend the pudding in a high-speed blender for a smoother consistency.
