The summer like temperatures in New England last week (80’s in April…unheard of!) had me dreaming of days by the pool, t-shirts & flip flops, and easy summer recipes. You know the ones…the recipes that don’t require baking, or spending long hours in the kitchen. And of course when I think of summer, it reminds me of all things patriotic!

Well this dessert captures all of those things and feels like summer in a jar if you ask me! It combines an easy no bake cheesecake with fresh strawberries & blueberries, making it the perfect summertime treat or for any holiday or occasion.

And can I just add that serving anything in a mason jar just looks and tastes better…wouldn’t you agree?!

Graham Cracker Crust


Add graham cracker crumbs, sugar, and melted butter into a bowl and stir until fully combined. Press about 2 tablespoons of the graham cracker mixture into the bottom of each mason jar.


Pro Tip: Instead of crushing your graham crackers into crumbs, purchase a box of graham cracker crumbs. It may cost slightly more but will save you a step, cleanup, and time.


Easy No Bake Cheesecake Filling


Beat the cream cheese in a mixing bowl with an electric mixer until smooth. Add powdered sugar, beat to combine. Add lemon juice & milk, and beat until fully incorporated. Gently fold in cool whip or freshly whipped cream into cream cheese mixture.


Pro Tip: Gently fold the cool whip into the cream cheese mixture with a whisk. Using a whisk will help to keep a light, fluffy consistency to the cheesecake.

Mini Cheesecake Trifle Assembly


To create dessert as shown, layer graham cracker crust on bottom of jar, then a layer of cheesecake, chopped strawberries, another layer of cheesecake, blueberries, and final layer of cheesecake. Top with fresh star shaped strawberries & blueberries.

To create star shaped strawberries, slice strawberries vertically about 1/4″ thick. Take a star shaped cookie cutter and push through sliced strawberry. This is the star cookie cutter I used.


Pro Tip: Layer as much graham cracker crumbs as you like. The graham cracker crust is my favorite part of any cheesecake, so I added a pretty think layer of crumbs. Feel free to use less!


Pro Tip: Use a ziplock baggie as a piping bag to add the cheesecake to the mason jars. This will help you keep the sides of the mason jars clean.

How long will these mini cheesecake trifles last?


I recommend assembling these mini cheesecake trifles the day you plan on serving them. The berries will begin to release moisture into the cheesecake, resulting in a watery dessert if made too far in advance.

However, you can prepare all of the ingredients separately a day or two ahead of time, which is what I did and then assemble.


What if I Don’t Have Mason Jars?


Don’t worry! These do not have to be served in mason jars. Feel free to use small drinking glasses, dessert or ice cream dishes, or even shot glasses for these mini cheesecake trifles.

This easy summer dessert can also be served in a larger trifle dish as well.

Graham Cracker Crust
  • 1 1/2 cups Graham Cracker Crumbs
  • 1/3 cup Salted Butter melted
  • 1 tbsp. Granulated Sugar
Cheesecake
  • 8 oz. Cream Cheese
  • 1/2 cup Powdered Sugar
  • 2 tsp. Lemon Juice freshly squeezed

  • 2 cups Cool Whip or freshly whipped cream

  • 1 cup Blueberries
