Simple 3 Ingredient Microwave Mint Fudge

I don’t know about you, but I am ALLLLL about easy recipes. If I see a recipe with too many ingredients or tons of steps, I just move on to another recipe…haha!! That is why this has been my favorite mint fudge recipe for YEARS!! It takes minutes, is almost fool proof, and is good enough to give away. (I usually include a little bit on my Holiday treat trays for my neighbors.) Besides that…ANDES MINTS!! I am sure we can ALL agree that they are THE BEST!! So who WOULD’T want some Andes Mint Fudge?!?!

I will include the recipe below, but first I wanna pass on a few tips I have learned over the years.


  • Once the chocolate chips are melted…HURRY!! You have to IMMEDIATELY pour the fudge into your pain. Otherwise, it will start to set and you will have bumpy/lumpy fudge.
  • Use the good chocolate chips. For cookies and treats, I will settle for generic chips. BUT for fudge, go big or go home:) I REALLY like Ghirardelli dark chips or Hershey’s special Dark.
  • If you cannot find the Andes chips, you can cut up Andes Chocolates. It is just a pain to unwrap them and chop them. Workable…YES. Pleasant…Not so much.
  • If you want nice clean cut fudge, put it in the fridge before cutting and use a strong sharp knife. BUT if you just want to dig in and enjoy, fresh is best. I love a nice soft fudge. If you refrigerate your fudge, let it sit out before eating. ORRRR if you wanna know a little trick…microwave a piece for 7-10 seconds and it is HEAVEN!!! Don’t ask me why I know so much about eating fudge…
  • Only use as much of the Andes chips as you can press into the top of the fudge. Don’t think MORE IS BETTER. It is actually just a waste. Once your fudge cools, only those chips that are STUCK in the top will stay put. The rest will just fall right off. SO keep the extra and make another batch:)

Ingredients
3 ingredient mint fudge
  • 3 cups dark chocolate chips (you can use semi sweet if you prefer it) approx 1.5 bags. BUT if you wanna stick to 1 bag…it will still work. Your fudge will just not be as thick. (not thick…like stirring thick. Thick…like deep in the pan.)
  • 1 cup Andes mint chips Just enough to cover the top of your fudge.
  • 1 10-14 oz can sweetened cond
Instructions
Instructions:
Line an 8×8 or 9×9 inch pan with foil or parchment paper. Make sure your foil comes over the sides of the man…it will help when it is time to remove the foil and cut the fudge.
Pour your dark chips and microwave for 35 seconds.
Stir. Then microwave for 30 seconds. Stir. If they are not melted, continue heating in 20 second increments until the chocolate is melted and will stir and be nice and smooth.
Quickly stir in your sweetened milk.
Immediately pour the chocolate mixture into your pan and smooth out the top. It will begin to set FAST!!
Quickly add the Andes chips to the top and lightly press them into the top of your fudge to get them slightly stuck.
Refrigerate for at least 1 hour before trying to cut. Use your foil/parchment as handles and remove from pan. Then cut into small squares and enjoy.
Store in an airtight container in the fridge. If you want to keep it longer than a week, keep it sealed and in the freezer.
