Frozen Chocolate-Covered Banana Bites

I love fruit dipped in chocolate. It used to be one of my most-requested birthday treats as a kid growing up. I especially love bananas and strawberries dipped in chocolate...nothing better! That is until I took some creative liberties with the traditional method and added some stellar extra toppings for fun! Peanut butter and jelly, anyone?

I used all sorts of fillings like peanut butter and jelly, almond butter, shredded coconut, raspberry chia jam, mixed nuts, honey and pistachios. If I had Nutella on hand, I probably would have used that too for a quadruple chocolate explosion.

Down below, you will see I used 3 kinds of Belgian chocolate. You can find these bars at Aldi or Trader Joe's and likely any other well-stocked grocery store. Since these are pretty simple in ingredients, I wanted to make sure I used a chocolate that really popped and was something extremely tasty. I am so glad I used it! If you don't have Belgian chocolate, you can use whatever you have for chocolate chips and melt those down. This is such a forgiving recipe!

Feel free to mix and match fillings and get creative with it! You can even place the fillings on the outside as well before the chocolate sets so you can tell what is inside. I went for a random grab-bag/box of chocolate situation so I will be surprised. But if you have picky eaters in the house, I highly recommend trying this method!

Chocolate Banana Bites
  • 4-5 large bananas, sliced into about 1 inch rounds
  • 12 ounces semi-sweet Belgian chocolate
  • 6 ounces milk Belgian chocolate
  • 6 ounces dark Belgian chocolate
  • 2 Tbsp coconut oil
  • Various fillings: peanut butter, jams, honey, nuts, coconut, etc.
  • 40 mini muffin liners
Chocolate Banana Bites
Cut bananas into slices and place on parchment on a baking sheet
Add toppings to each slice and freeze for 25 minutes
Line a mini muffin tray (24 ct) with liners
Melt together your chocolate bars and coconut oil either in double-broiler or in increments in the microwave.
Drop about 1 tsp into the bottom of each liner
Add frozen bananas slice (1 per cup)
Pour over another 1-2 tsp of chocolate to cover each bite. Top with your fillings while chocolate still warm if you would like.
They will be messy and that is OK!
Freeze mini muffin tray until all are completely frozen, about 2 hours
I store mine in freeze safe bag at this stage and then take out 1 or 2 when I want a quick and tasty treat. Bananas melt and turn liquidy quickly so be aware!!
  • Store these in the freezer in a freezer-safe container. When going to eat them, take only a couple out at a time as they thaw QUICKLY and the banana becomes very runny as it thaws and kind of ruins the treat when it isn't frozen.
  • You can make these in normal muffin tin as well, just note they will be wider and flatter-more like a Reeses cup.
