Chocolate Cherry Ice Cream. 🍒I am just starting to see cherries in the grocery store and I am so excited! They are not at their best, but that didn’t stop me from trying to replicate the Flathead Cherry Chocolate Ice Cream we used to get at Sweet Peaks Ice Cream in Montana. I came pretty close but nothing beats Flathead cherries! I actually used this ice cream to make Mini Black Forest Ice Cream Cakes. Those were pretty tasty but I think I like this ice cream just as much scooped into a bowl with homemade chocolate sauce drizzled (dumped) on top!
Cherry Chocolate Chip Ice Cream

Ingredients
Cherries
- 2 cups cherries (pitted fresh or frozen)
- 2 cups sugar
- 2 cups water
Ice Cream
- 1 cup whole milk
- 2 cups half + half
- 1 cup heavy cream
- 8 ounces sugar
- 7 egg yolks
- 1 teaspoon vanilla
- 1 cup finely chopped bittersweet chocolate

- In a large pan, bring cherries, sugar and water to a boil over high heat. Stir often. Reduce heat and simmer for 5 minutes. Remove from the heat. Strain cherries from syrup and let both cool. Transfer syrup to a container and store in fridge for another use.
Ice Cream
- Add the half and half, heavy cream and whole milk to a medium saucepan pan over medium heat. Bring the mixture to a simmer, making sure to stir often.
- In a large bowl, whisk together the egg yolks and sugar. Slowly whisk in about half of the cream mixture. Pour that mixture back into the pan with the remaining heavy cream/milk mixture. Continue to cook on medium heat until the mixture is thick enough to coat the back of a spoon.
- Remove from the heat and pour through a sieve. Let cool to room temperature, whisking constantly. Cover and put in the refrigerator to chill completely.
- Once it has chilled, transfer it to the bowl of an ice cream maker. Churn until the mixture is almost the texture of frozen yogurt. Add the reserved cherries and chopped chocolate. Transfer to a plastic container and freeze to desired consistency.
