A healthier twist on the original twix bar...


A quick and easy healthy snack idea

I'm always coming up with new ways to use my healthy vegan caramel and these twix bars turned out perfect thanks to it! A delicious shortbread layer combined with the vegan caramel and topped with dark chocolate...oh my!


You will need:

Almond flour, all-purpose flour, maple syrup and coconut oil for the shortbread layer.

Coconut oil, dates, smooth peanut butter and water for the caramel.

Finally, you will need dark chocolate or any other chocolate you may prefer for the top.

You will need:

  • 8 inch pan
  • Food Processor
  • 1 mixing bowl
  • Bowl to melt the chocolate
  • Spatula

For measuring: 1/4 tsp, 1 tsp, 1 tbsp, 1/2 cup, 1 cup.

Ingredients
Shortbread Layer:
  • 1/2 cup almond flour
  • 1 - 1/2 cups all-purpose flour
  • 1 tablespoon maple syrup
  • 1/2 cup + 1 - 1/2 tablespoons coconut oil
  • 1/4 teaspoon salt
Caramel Filling:
  • 1 cup dates
  • 3 tablespoons smooth peanut butter
  • 1 tablespoon coconut oil
  • 5 tablespoons water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
Top:
  • 8.8 oz (250g) dark melted chocolate
  • 1 tablespoon coconut oil
Instructions

Start by preheating the oven to 350°F/180°C and line the baking pan with parchment paper.
In a bowl, combine the shortbread ingredients together then transfer to the pan and flatten it.
Bake for 20 minutes.
Once the shortbread layer has chilled slightly, make the caramel.
In a food processor, blend all the caramel ingredients together leaving the water for last.
You can add less or more water, according to your preference.
Spread the caramel all over the shortbread layer.
Melt the chocolate and spread on top of the caramel.
Optional: top with sea salt.
Refrigerate for at least an hour then cut into bars, enjoy!
