Coconut Nests With Chocolate

Today I am sharing another fun and easy Spring treat that I am making for Easter. These were so fun to make and tasted so good I may have ate a couple and had to make new ones before I got the pictures taken. I love coconut in almost anything and so these were right up my ally. My hubby not so much a fan but after he tasted them with the chocolate in the nests he loved them.


Here is what you need, coconut, white or dark melting chocolate and whatever eggs you prefer to put in the nests.

Mix your sugar, egg whites and salt together and then add in the coconut. Stir well. Spray your mini muffin pan and add about a tablespoon of the coconut. Make a well in the center and bake at 300 degrees for twenty to thirty minutes.

Let the nests cool when done baking. Then melt your chocolate in thirty second intervals until melted.

Add In about a tablespoon or however full you want the nest to be. Just remember you are adding some eggs in.

I added my eggs after the chocolate dried just because my hubby wanted to eat them separate. Yes he is my tester and loves it. But for Easter I am going to put the eggs in when the chocolate is drying. To help glue them into the nests.

Ingredients

  • 4 Egg whites Mixed up
  • 1 T sugar
  • 1/4 t Salt
  • 1 Package Coconut
  • 1/2 Bag Melting Chocolate
  • 36 Candy eggs
Instructions

Mix sugar, salt and whipped egg whites together.
Add coconut and stir well.Spray your mini muffin pan and add a tablespoon of the coconut to each.Make a well in the center.Bake on 300 degrees for 20-30 minutes.Melt your chocolate Add a tablespoon to each well after the nests have cooled.Add in however many of theeggs you want.
