Smoked Salmon Cucumber Salad

My love for salads is infinite. The first thing I learn to make in the kitchen at age 12 was salads and homemade dressings. Since then, I love to create different recipes with produce I have on hand.
As for dressing, I love to use fresh ingredients, with lemon or vinegar base. For this recipe I jumped into the viral recipe trend of the 1 cucumber salad in a jar. I added smoked salmon, dill, pickled onions, and a creamy lemon dressing. A simple, yet refreshing salad. So good!
I used the following:
- 1 english cucumber
- 2 Tbsp of creamy lemon dill dressing
- 2 Tbsp of pickled onions
- 4 oz of smoked salmon in chunks
- a Sprinkle Chili crunch seasoning for a spicy kick or sriracha
- Fresh chopped dill
Simple add all these ingredients into a mason jar, shake it and you are good to go. Enjoy simple eating from the jar using chopsticks.

Smoked Salmon Cucumber Salad
Recipe details
Ingredients
- 1 medium size english cucumber
- 4 oz of smoked salmon
- 2 Tbsp of pickled onions or thinly sliced shallots
- 1 sprinkle of crunchy chili onion seasoning or 1 Tsp of sriracha sauce
- Creamy Lemon Dill Dressing:
- 1 spoonful of mayonnaise
- 1 spoonful of greek yogurt
- 1 small garlic clove grated
- 1 Tbsp of lemon juice
- 1/2 tsp of salt
- 1/4 tsp of pepper
- 1 Tbsp chopped fresh dill
Instructions
- Using a mandolin. slice the cucumber into thin slices and add them in a large mason jar
- Add 1- 2 Tbsp of the lemon dill dressing
- Add 1 spoonful of pickled onions
- Add about 4 oz of smoked salmon roughly chopped
- Sprinkle of Trader Joe's crunchy chili onion seasoning or drizzle of sriracha for a nice spicy kick.
- Cover the mason jar and shake for 30 seconds until all is combine, and it is ready. Enjoy from the jar with chop sticks or serve in a plate.
