Ingredients

  • 1 lb white fish fillets (such as cod, tilapia, or halibut), cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 carrots, julienned
  • 1 cup peas
  • 1 small bunch bock choy, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
Instructions

In a small bowl, mix together soy sauce, rice vinegar, sesame oil, minced garlic, and minced ginger. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the julienned carrots to the skillet and stir-fry for 2-3 minutes until slightly softened.
Add the peas and bock choy to the skillet and continue to stir-fry for another 2 minutes until vegetables are tender-crisp.
Push the vegetables to one side of the skillet and add the white fish pieces to the empty space. Season the fish with salt and pepper.
Cook the fish for 2-3 minutes on each side until it's opaque and cooked through.
Pour the soy sauce mixture over the fish and vegetables in the skillet. Stir everything together gently to coat evenly.
Cook for another minute until the sauce has thickened slightly and everything is heated through.
Remove the skillet from heat and sprinkle chopped fresh herbs over the stir fry.
Serve the white fish stir fry immediately over cooked rice or noodles.
