Chicken Lettuce Wraps

These have been a weekly repeat since making them the first time. They come together in no time at all and are a delicious low carb, high protein meal. All you need are some veggies, a pack of ground chicken, and some sauce.
I've been playing around with variations of this recipe, some spicier and others saucier. You can adjust this recipe according to your preference.
When the lettuce isn't cooperating, I just make it into a salad. You can also serve this with rice if you're looking to add in carbs.

Chicken Lettuce Wraps

Ingredients
- 1 head of lettuce
- 500g ground chicken
- 2 scallions, sliced
- 1 bag coleslaw mix (cabbage, carrot)
- 1 red pepper, diced
- 1/4 cup cashews, roughly chopped
- chili peppers (optional)
For the Sauce
- 3/4 cup tamari or soy sauce
- 1 lime, juiced
- 2 tbsp honey or maple syrup
- 2 tbsp rice wine vinegar
Instructions
- Heat a pan on medium heat then add the ground chicken, breaking it up with a spatula as it cooks
- Cook the chicken through and drain any grease/oil as needed
- Add the diced red pepper, minced garlic, shredded coleslaw mix, sliced green onions, and roughly chopped cashews to the chicken
- While the chicken and veggies cook, prepare the sauce by combining all ingredients in a bowl
- Add the sauce to the chicken mix
- Add the sauce to the pan and let it thicken
- Assemble the wraps by gently pulling apart the iceberg lettuce leaves then filling it with the chicken filling
- Garnish with sesame seeds
Tips
- Substitute ground chicken for turkey, pork, or beef
- If you can't find coleslaw mix, you can purchase green cabbage and a carrot and chop it up
