M&M Easter Egg Blondies

Spring forward with these scrumptious M&M Easter Egg Blondies. Topped with pastel-colored chocolates, these chewy cookie bars will make the Easter Bunny hop straight to your house.


My alarm went off at the crack of dawn. After abusing it with a slew of four letter words, I hit the snooze and buried my head under a pillow until a relentless blaring forced me back into consciousness. Only this time the nerve-grating noise wasn’t the alarm, it was the bird outside my window. I hauled myself out of bed and made it to the sill in time to witness a blue heron relieving himself on my lanai.


This prophetic poop tells me everything I need to know about how today is going to go. There’s no need to read my horoscope because Mother Nature just gave me a heads up on what to expect: it is about to hit the bricks. Only it wasn’t feces that ended up falling, it was me. Despite the warning, I slipped on the way out of the shower like a cartoon character on a banana peel.

It’s a hoot when Donald Duck does it, but he has feathers to soften the blow. My fall was broken by a litter box which, ironically, is now broken too. If you’re keeping tabs, I’ve gone from bird poop on my pool deck to cat poop on my hand and I’ve only been awake for twelve minutes. Since it’s been one ugly thing after another this morning, I need something pretty to balance it out. Luckily, my pantry is stocked with the prettiest candy of all: pastel-colored M&M’s.


Speckled like mini robin’s eggs, these milk chocolate candies are the perfect topper for my chewy blondie bars. Ready in less than 30 minutes from start to finish, this one-bowl recipe is sure to brighten even the crappiest of days. Because ain’t no bunny got time for bad days, especially the Easter Bunny.

For ooey-gooey chewy blondies, use the spoon and level method to measure flour. Scooping flour is a no-no. That technique over packs flour into the measuring cup which will result in dry, cakey blondies.

Above all, a shiny metal baking pan is a must for this recipe. Glass and stoneware pans require additional baking time which, compared to metal, dries out blondies.


Storage and Freezing Tips for M&M Easter Egg Blondies

Blondies will keep at room temperature in an airtight container for 3 days or in the refrigerator for up to 5 days.


Blondies can placed in an airtight container then frozen up to 3 months. Thaw overnight in the refrigerator.

Ingredients

  • 8 Tbsp unsalted butter melted and cooled
  • 1 cup dark brown sugar packed
  • 1 large egg room temperature
  • 1.5 tsp vanilla extract pure
  • 1/2 tsp sea salt fine
  • 1 tsp baking powder
  • 1 cup all-purpose flour unbleached
  • 1/2 cup M&M Easter Eggs milk chocolate
Instructions

Preheat oven to 350 degrees. Grease an 8 x 8 metal baking pan then line with parchment paper.
Add melted butter to a large bowl then whisk in brown sugar until well combined.
Whisk in egg until combined then add vanilla.
Add salt, baking powder and flour, stirring with a wooden spoon until just combined and flour streaks are still visible. Avoid overmixing.
Pour batter into prepared baking tin then smooth with a spatula.
Bake for 17 to 20 minutes until a toothpick inserted into the center yields a few moist crumbs. Do not overbake.
Remove pan from oven and immediately top with M&M Easter Eggs. Gently press candy eggs into the top of the blondies.
Place pan on a wire rack to cool completely, then use parchment to lift out. Cut blondies into squares and serve.
Blondies will keep at room temperature in an airtight container for 3 days.
