Spring is a wonderful time of year for new beginnings and new ideas. How about making a charcuterie for you Easter celebration? The following recipes are easy enough to do with your children.


As you are putting your board together, add other Easter treats and decorations to fill the board and add interest.

Ingredients
Easter Chick Lemon Cookies
  • 1 box lemon cake mix
  • 2 eggs
  • 1/2 cup shortening
  • yellow food coloring
  • mini semi-sweet chocolate chips
  • orange jelly beans
Flower Pretzel Bites
  • Square pretzels
  • White chocolate candy melts
  • Spring colored M&Ms
Cadbury Mini Egg Dip
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 tbsp brown sugar
  • 3/4 cup confectioner’s sugar
  • 1 tsp vanilla extract
  • 1/2 cup Cadbury Mini Eggs candies, crushed
Instructions
Easter Chick Lemon Cookies
Heat oven to 350 degrees
Open lemon cake mix into a large bowl
Add 2 eggs and 1/2 cup of shortening
Mix until combined, batter will be thicker than cake mix
If you would like the batter to be a darker yellow color, add food coloring until you achieve the color you want.
Scoop a tablespoon of batter and roll into a ball - this is the body of the chick
Place the ball onto a parchment lined cookie sheet
Scoop another tablespoon of batter and break into two pieces. Roll each piece into a ball - this is the head.
Place the small ball so it is just touching the larger ball. Continue to fill the baking sheet with balls.
Bake for 12 minutes
Remove from the oven and press the mini chocolate chips into the head for the eyes.
For the beak - smash an orange jelly bean so it is flat. Cut the flatten circle into four pieces.
Once the cookies are cooled, add a beak to the head.
Flower Pretzel Bites
Separate M&Ms by color
Place nine pretzels on a microwave safe plate
Place one candy melt in the center of each pretzel
Place plate in microwave for 40 seconds (amount of time may vary depending on the microwave)
Remove the plate. The candy melt should be melted but not runny,
Place one M&M in the center of the melt
Place six of another color M&M around the outside of the center M&M making a flower
Cadbury Mini Egg Dip
In a stand mixer or medium bowl beat cream cheese and butter together.
Add brown sugar, confectioner's sugar, and vanilla until well combined.
Place the mini eggs into a plastic bag and crush with a rolling pin.
Stir in Cadbury Mini Eggs candies with a spatula.
Store in refrigerator until ready to serve.
