This Crumbled Apple Cake, or "Sbriciolata di Mele," is a delightful Italian dessert that is perfect for any occasion. It's not quite like a british apple crumble, as there is a pie base as opposed to just apples with crumbs on top, hence why it earns the name of "cake" in the name.
With its tender apple filling and buttery crumb topping, it offers a wonderful mix of textures — crispy on top and soft in the middle. It's a recipe that is super easy to make that combines simple ingredients, making it a great go-to for family gatherings, holidays, or just a sweet treat with coffee. - 3 ¼ cups of all-purpose flour
- ¾ cup of granulated sugar (for the dough)
- ½ cup (1 stick) of unsalted butter, softened
- 2 large eggs
- 2 teaspoons of baking powder
- 3 large apples (or pears, if you prefer)
- ⅓ cup of sugar (for the filling)
- Juice from 1 lemon
Instructions
- Preheat your oven to 350°F (180°C). Grease a 10-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, combine the flour, ¾ cup of sugar, and baking powder. Stir to mix everything together evenly. Add the eggs and softened butter, and start combining the ingredients with your hands. The dough should have a crumbly, sandy texture, but make sure everything is well incorporated.
- Prepare the apple filling by peeling and dicing the apples into small cubes. In a skillet, add the apples, ⅓ cup of sugar, and lemon juice. Cook over medium heat for 4-5 minutes, stirring frequently until the apples have softened slightly but still hold their shape. Remove from heat and set aside.
- Take half of the crumbly dough and press it into the bottom of the prepared cake pan, making sure to press lightly and also cover the sides to form a slight crust.
- Pour the apple filling over the crust, spreading it out evenly with a spoon.
- Sprinkle the remaining dough over the apple filling, covering the surface without pressing down. This will create a crumble topping.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
- Let the cake cool completely before removing it from the pan. For an extra touch, dust with powdered sugar before serving.
