Beach Cupcakes (top Decor Only!)

I made these cupcakes for a birthday party and I loved how they turned out! It was a Summer / Beach themed party so they fit the theme perfect. I also made a bigger cake version. I used a homemade 2 gram sugar frosting recipe (from an earlier post) that is a family tradition I created. My husband and I both are not big frosting fans, so I use my own recipe that tastes delicious and sweet yet is only 2 grams sugar! I used graham crackers for the sand, and use different beach themed candies which are seasonal items from Trader Joes. I used funfetti cake mix from Trader Joes which yields 12 cupcakes, but this specific recipe is for the decor on top of the cupcake. Enjoy!

Ingredients
Beach Cupcakes
  • 1 tbsp frosting choice
  • 1 teddy graham
  • 1 peach ring candy
  • 1 beach themed gummy (seasonal summer item at Trader Joes)
  • 1/2 tbsp crushed graham crackers
  • 1 toothpick umbrella
Instructions
Beach Cupcake (top decor only!)
With your finished baked cupcake, spread the frosting mix on top in an even layer
Next, add crushed graham cracker to half the top of the cupcake (this will be your sand)
Place peach ring on the other side of the graham crackers (this is the life saver in the "ocean")
Place teddy graham inside peach ring gummy candy
Place extra beach or ocean themed gummies anywhere that makes sense
Place toothpick umbrella on top! Used as shade for teddy grahams, but in the picture featured the umbrella is placed strategically to hold the plastic wrap as it was stored overnight
Tips
  • This recipe is for the top decor only on this cupcake. Frosting is a separate recipe
  • I also used Swedish fish for some cupcakes
