The combination of bran cereal and fresh berries makes these muffins really good! And they’re probably a little healthier than other kinds of muffins because of the bran. They’re also sweetened with honey and brown sugar, for a lightly-sweet flavor.

In these muffins, you can use raspberries, blueberries, blackberries, or chopped strawberries—whatever fruit you like best! You could probably even used sliced bananas!

These muffins bake up nicely with rounded tops. Enjoy them for breakfast, or an afternoon snack, or anytime you’re having a cup of coffee or tea! They're also great to serve for a leisurely weekend brunch any time of the year!

  • 1/2 cup canola oil or light olive oil
  • 1 teaspoon pure vanilla extract
