These Roasted Rosemary Cashews are made with sugar, spice, and everything nice. They are the perfect savory snack this holiday season. Warm nuts tossed with a little butter, fresh rosemary, salt, warm spices, and a touch of sugar and cayenne make them virtually irresistible.

Serve these delicious cashews in a bowl on the table, use them on a charcuterie board for guests, take them on a hike in nature, or just eat them by the handfuls throughout the day. A jar of these salty, sweet, and slightly spicy nuts also makes a great host/hostess gift during the holidays. Your friends, family, and neighbors will love you. Be sure to have the recipe handy! Chestnuts Roasting on an Open Fire…


Okay, okay, I know we are talking cashews here, but doesn’t that song make you feel like snacking on some roasted warm nuts when you hear it!? I picture myself strolling down the sidewalk in New York City with the streetlights dimly lit and snow gently falling from the sky in the moonlight…but I digress.

Back here at home, these roasted rosemary cashews give me the same sense of nostalgia during the holiday season. Although these nuts are not roasted on an open fire, they are roasted in the oven. The toasted nut flavor that is brought out in them through roasting is wonderfully delicious.


Ingredients in Roasted Rosemary Cashews


The simple ingredients in these nuts are mostly pantry staples, aside from the fresh Rosemary. You can use dried Rosemary, but I promise you that using fresh not only makes them taste better, but it makes them look beautiful too. The touch of green adds a fresh and festive look to the cashews that make them the perfect holiday season snack.

  • Cashews (I always use Raw Whole Cashews from Trader Joe’s)
  • Fresh Rosemary
  • Cayenne
  • Cinnamon
  • Brown sugar
  • Sea salt
  • Butter


How to Make Roasted Rosemary Cashews


First, spread the cashews out on an ungreased cookie sheet and bake them for about 8-10 minutes until they are warmed through and slightly browned. Next, combine the rosemary, cayenne pepper, cinnamon, brown sugar, and salt in a small bowl.

Take the cashews out of the oven and allow them to cool for about 5 minutes. (You don’t want them to get too cool, otherwise, the butter will not fully coat them which is important to ensure the sugar, salt, and spices coat them.) Meanwhile, melt the butter in a microwave-safe bowl.

Put the warm cashews in a large bowl and pour the melted butter over them. Stir them thoroughly to make sure each nut is coated with butter. Then, pour the sugar, spices, and salt mixture over the warm nuts and stir to coat them evenly and completely. Finally, sprinkle the rosemary on top of the nuts and continue to stir them until they are completely coated.

Serve Roasted Rosemary Cashews warm or at room temperature. Jar them for storage and freshness.

When you or someone you love starts eating these delicious nuts, you will find it’s hard to stop. They are the perfect sweet, savory, spicy treat!

Once the roasted rosemary cashews are in the jars and they are sealed, I tie a piece of twine or ribbon around the lid. Sometimes I attach a little gift tag for the recipient too. I always add a rosemary sprig for a special finishing touch. It adds beauty to the presentation while at the same time, it smells divine.

  • 1 pound bag of raw whole cashews
  • 2 tablespoons coarsely chopped fresh rosemary
  • 1/2 teaspoon cayenne
  • pinch of cinnamon
  • 2 teaspoons brown sugar
