Anybody that knows me knows that I LOVE fried okra. However, it can be time consuming and messy to make, and pretty unhealthy to eat it all of the time (even though I would love to). That is why I choose to roast okra 99% of the time.


Roasting okra gives it a savory charred flavor that is a close second to fried okra. And it is so much easier to prepare making it the perfect week night side dish! The best part is that you can use frozen okra to save time and money (no need to thaw it)!


Roasted okra is the perfect week night side dish that goes great with anything, but especially hamburgers, grilled chicken, or baked pork chops.

Three simple ingredients come together to make this easy, and healthy side dish.

No need to thaw the frozen okra, simple season, spray with cooking spray, and bake!

After baking for about 20-30 minutes, the frozen okra turns into a charred, slightly crunchy treat.

Roasted okra is a much healthier alternative to fried.

Ingredients

  • Cooking spray
  • 1 lb. frozen okra
  • 1 tsp. seasoning salt
Instructions

1. Preheat oven to 450 degrees.
2. Line a baking sheet with aluminum foil and spray with cooking spray.
3. Place frozen okra on baking sheet, spray with cooking spray and sprinkle with seasoning salt.
4. Bake for 20-30 minutes, tossing halfway through baking.

    Okra is also good grilled on the outdoor grill. Put a little olive oil on it & sprinkle with Greek seasoning or any seasoning of choice.
