Biscoff Blondies
I have tried for forever a while to get the perfect blondie texture, and I am so happy to finally have achieved it with these Biscoff Blondies! They have the exact texture of a brownie - thick, fudgy, chewy, crispy on the outside and soft on the inside - without the chocolate flavor!
If you can't find Biscoff cookies, or you'd prefer to use something else, you can still make these blondies and simply substitute your favorite cookie in place of the Biscoff ones. Oreo, chocolate chip cookies, or even peanut butter cookies would all taste delicious!
These Biscoff blondies freeze amazingly well! I use a freezer Ziploc to freeze individual squares, but any airtight freezer safe container will work. Once you're ready to eat them again, simply allow them to sit at room temperature for 20-30 minutes and then enjoy! I like to freeze half the batch so they stay fresh longer
I can't wait to put biscoff cookies into my fudgy chocolate brownies or even my chocolate chip cookies, they make such an exciting addition to most baked goods!
Biscoff Blondies

Ingredients
- 1 cup brown sugar, packed (200 g)
- 1/3 cup butter, melted (76 g)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2/3 cup white chocolate wafers, melted (100 g)
- 1 cup flour (125 g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8-10 biscoff cookies, crushed
- 1/4 cup biscoff cookie spread (80 g)
Instructions
- Preheat oven to 350 F, line a 9x9 baking pan with parchment and set aside
- In a large bowl, whisk together the brown sugar, butter, eggs and vanilla until smooth
- Carefully melt the white chocolate using the microwave or a double boiler, then stir into the sugar mixture until smooth
- Stir in the flour, baking powder and salt until just combined; do not over mix
- fold in crushed cookie pieces until evenly distributed
- Spread the blondie batter into the prepared pan, and add small dollops of cookie butter and swirl through the blondie batter with a butter knife, you can also press in some extra cookie pieces on top if desired
- Bake the blondies in preheated oven for 30-35 minutes, or until they are golden and a toothpick inserted into center comes out clean (a few crumbs are fine). Allow to cool before slicing and serving
